The average voter in Mississippi is not going to be swayed by the issue of climate change, but will be swayed by excessive inflation on groceries fueled by unchecked consolidation and price fixing in the meatpacking industry.

The Republican solution of 'letting the free market decide' by consumers switching to substitute products if price rises and new market entrants motivated by increased profits to disrupt incumbents doesn't work given that demand for beef is relatively inelastic and it is difficult for smaller meatpacking companies to effectively compete in that market.

Well that and the "let them eat cake" attitude, is uh.., well lets just say there is historical precedent for this particular rhetorical flourish uh.. not going so well.

I'm reading the excellent book Meat at the moment. The author is themselves vegan or vegetarian, but they fully realize that getting everyone to adopt that diet is not going to happen.

He acknowledges that as a species, humans loooove their meat and the demand is not likely to go down. And so the problem statement basically is - given that our current eating habits are one of the largest causes of climate change - what do we do about it?

I just note that this state has already closed off one of the main options before it's even arrived. I don't know what that option may do in the economic sphere in the future - right now culture meat is wildly expensive, and I have no idea if it can realistically scale to the point where it's as cheap as or cheaper than conventional.
