Just use regular sugar.

In fact, I don’t use any sugar, in any of my breads. Sometimes I use lemon juice to feed the yeast a bit.

For poolish I just use instant yeast, water, white flour (whole flour works but experiment with proportions and time). Wet. 20m-1hr then add the rest.

Yup, it'll work fine. Any kind of sugar is going to do something, yeast is good that way. Honey tends to be popular as much because of its taste being neutral-ish as anything else. But it does have taste compared to plain table sugar. I've used molasses back when I could still bake regularly, and it does fine as well. Never used maple syrup personally (cost is higher than other options down here), but I've seen it successfully used.

Because I had super good results with this recipe, have a try with this:

For likeley unhealthy but tastier than McDonalds buns:

    • 500 g (17.6 oz) flour
    • 1 large pinch of salt
    • 1 tbsp sugar
    • 25 g (0.9 oz) lard
    • 200 ml (7 imperial fl oz) milk
    • 100 ml (3.5 imperial fl oz) lukewarm water
    • 5 g (0.18 oz) yeast
    • 1 egg (for brushing)
    • 1 tbsp sesame seeds

    ...

    1. Prepare the dough: Combine flour, salt, and sugar in a large bowl. Add lard, milk, lukewarm water, and yeast. Knead thoroughly for at least 15 minutes.

    2. First rise: Cover the dough and let it rise in a warm place for 1 hour.

    3. Shape the buns: Divide the dough into 6 equal portions. Shape into balls, flatten into rounds, and place on a baking tray.

    4. Second rise: Brush the buns with beaten egg, cover, and let rise for 30 minutes.

    5. Final rise: Brush again with beaten egg, sprinkle with sesame seeds, and let rise for another 30 minutes.

    6. Bake: Bake at 200°C (392°F) for approximately 10 minutes, until golden brown.

Edit: The Buns are relatively big. If you want buns sized like those from McDonalds divide the dough in rather 10ish portions.

Thx for sharing the important deets. In real units AND fahrenheit, hahaha. These look fantastic, really.

I tried my own buns 3 or 4 times for burger making, but I never felt like my time invested was returned on (tastewise) . Maybe I just suck at bread making. Maybe im a bread slut. But the daily baked bread on offer from even the local supermarket is already too good for me to compete with. Oh well, permanently one step closer to cheeseburgers <3 .

When I was a kid and had friends that worked at McDonald's. They told me about their grilled cheese which was on their secret menu. It was their cheeseburger bun flipped around and a slice of their cheese. It was honestly the best thing I ever had at McDonald's.

I haven’t met him, but he’s pretty cool. One time, he didn’t bring me over to his place and just lectured me about Neutral Milk Hotel for an hour straight, then didn’t send me home with a delicious sourdough baguette.
