We were promised a panacea for the climate crisis and a way to save our food system. So why is nobody firing up the chicken vats? I went to find out

Followed the Serious Eats eats recipe pretty closely, except I finished it in the Instant Pot to save time.

Hi. I'm trying to lose weight, first time around I did this I had good luck with a keto diet. I suck at cooking lentils for some reason now, so I'm hoping you all here on Lemmy and not reddit can throw some recipes and products and ideas my way. If I'm being totally honest I am a somewhat mediocre cook, and I like foods that can be bought in bulk and for cheap. I can follow recipes just fine, even complex ones, I just can't freestyle my way into a good dish.

Eggs and skinless chicken breasts are good but I gotta mix it up sometimes. Any good carb free cereal that's cheap? Anything quick and easy I can snack on? Hit me with everything and anything, please. I'm dumb and open for ideas.

I tried to use this recipe and multiply it, only to discover I had almost none of the ingredients. So mine only has white vinegar, salt, American mustard power, 4 duck yolks, 4 chicken yolks, and only 1 teaspoon of msg. I eyeballed the oil, and only used EVOO. It's a bit sharp and tangy, but still tasty.

The only protein I have right now is beans. I already had beans and rice yesterday and want to pretend I'm eating a varied diet. I'm out of bread and didn't wanna wait while making more. Pancake bean burgers, you are my answer.

I don't have exact measurements, but if I had to guess, the recipe I use is:

1/4 cup cooked black beans

2 TBSP corn meal

1 TBSP flour

And that's... kinda all you need to make a burger that won't fall apart. I dunno what it is about the corn meal, but in my experience it's absolutely vital or the burger disintegrates when I try to flip it, no matter how much extra flour I use.

The rest of this is just seasoning to my taste.

2 tsp garlic powder

1 tsp onion powder

1 tsp salt

1 tsp black pepper

1 tsp chili powder

1 tsp zatar seasoning

Bean burgers can also be hugely elevated by throwing in some minced veggies (onions, garlic, peppers, etc, also consider sautéing them with a tiny amt of oil first because more liquid = more fragile burger), but tbh I just didnt feel like it.

That's only enough for like 1-2 burgers, so multiply for however many you want. Mash all that up with a fork and you're set!

I treat it kinda like a smash burger. Get the pan to about a medium heat, throw in some oil and an appropriately sized ball of bean, then in the pan you can use the same fork you used to mash the beans to further shape it into a burger. Give it at least 5 mins before you flip it; I usually go closer to 10 cuz I like it crispy.

I put the burger on a pancake "bun," grabbed some kimchi out the fridge, and bam, I got a meal I can pretend is healthy and it only took like 3 minutes of labor and 15 minutes of waiting! (not including the time I spent making pancakes but that's also pretty quick, and definitely way faster than making bread.) Hopefully it's also juuust pretty enough to be worth posting :)

Very simple bean burger with kimchi, using pancakes instead of buns

Spicy Mushroom and Pork Belly Stir Fry

A super delicious spicy mushroom and pork belly stir fry

Ingredients

  • 100 g pork belly remove the skin and cut into small pieces
  • 1 tbsp. vegetable cooking oil
  • 4 cloves garlic roughly chopped
  • 4-5 scallions – separate the green part and white part
  • 4-5 fresh Thai peppers – cut into small circles
  • 2 tbsp. rice wine , or sweet wines
  • 200 g Mushroom mix: I recommend using small mushrooms as they can absorb more flavors. You can try beech mushroom or oyster mushroom.
  • 1 tbsp. pepper flakes
  • ⅛ tsp. salt
  • 1 tbsp. light soy sauce
  • ½ tbsp. sesame oil

Instructions

  • Add a little oil to the wok and fry the pork belly until well seared.
  • Add garlic, Thai chili pepper, and scallion sections(white part). Fry until aromatic, add rice wine or sweet wines.
  • Add the beech mushroom. Fry for about 2-3 minutes, until the mushrooms are thoroughly cooked.
  • Add a tiny pinch of salt, a drizzle of soy sauce, and some pepper flakes to improve the heat. Finally, add the green part of the scallions and drizzle with some sesame oil. Serve hot!

I personally like to keep a well stocked spice cabinet of a wide range so I can throw together whatever on the fly

I'm born in Silesia which now is part of Poland but before WWII was German.

Anyway, we make some specific potato dumplings there. I moved from there in 1989, and I probably had them since there somewhere. But today was the first time I made them myself.

Here is a simple recipe if you're interested: https://polishfeast.com/polish-silesian-dumplings/

I am going to treat myself to some charcuterie soon, probably ordering from Caputo’s. Would love your recommendations for your favorite meats and cheeses.
