LOWA makes most of their shoes in Europe. I think mostly the trail runners are not. Excellent quality.
Where are people moving to from Vimeo?
For Qobuz there is an unofficial native client, with DAC passthrough: https://github.com/vicrodh/qbz
Works very well.
The National - About Today
Radiohead - Pyramid Song
Sufjan Stevens - Carrie & Lowell (album)
I think in most of Europe, the cost of the actual electricity and the delivery of the electricity (i.e the infrastructure cost) is split into two different costs. Not sure if the price cited above includes both.
The score to Broadchurch is also great!

If you want free on mac/win there is quite a lot of good ones to choose from: dust piano from Westwood, Spindle from Orchestral tools, etc.
Meanwhile I found rethink dns. It's a DNS based blocking that also use the local VPN similar to tracker control, however you can add any wireguard VPN to use inside rethink dns. This allows one to use any VPN provider that supports wireguard.
The UI is not as good as tracker control for what you want, but it's possible to show logs of blocked request for each app.
Another company (Dao) will deliver mail instead.
The controversial text about VPNs was already removed from the proposal following the critic that came out. Source: https://kum.dk/aktuelt/nyheder/kulturministeren-justerer-lovforslag-og-fjerner-afsnit-om-vpn
Many VPNs provide blocking of trackers but you won't be able to see the kinda statistics tracker control gives you.
Alternatively you could self-host something like pi-hole which will give you overall statistics about what is being blocked on a device level, but you still wouldn't get information on a per app basis
