[–] Gnugit@aussie.zone 10 points 1 week ago (1 child) Acrylamide forms in burnt areas of food, particularly starchy foods like potatoes, when cooked with high heat, above 120 °C (248 °F).[7] Despite health scares following this discovery in 2002, and its classification as a probable carcinogen, there is ongoing debate as to whether acrylamide consumed through diet is likely to cause cancer in humans permalink fedilink source hideshow 1 child comment replies: [–] Digestive_Biscuit@feddit.uk 2 points 1 week ago In some countries, I want to say Norway but I could be mistaken, they have limits on the levels of acrylamide. I worked for a food manufacturer once who used a product called acrylaway in the wet end of the process when the dough is made. I don't know how it worked in the baking process but it lowered the levels and allowed the food to be sold to the country. permalink fedilink source parent
